I am about to crack open a few bottles of Dogfish Head 120 Minute. They have been aged app. five years at cellar temp. Original tasting several years ago was overtly sweet and almost un- drinkable. Any thoughts or experiences with this beer? Has it laid down well, burned of those sugars , and developed a fine aged brandy quality?

Stability shoes are another option, as they support the foot while preventing mild issues with over-pronation.Shoes with extra support and motion control are ideal for runners who over-pronate. Over-pronating means that your foot rolls too far inward when you run, and is common with people with a flat arch. In general, the more flat your arch is, the more support and motion control you need. Firm midsoles and flatter soles help to provide stability, while too much cushion can lessen stability.Runners with a high arch are more apt to under-pronate, or roll their feet outward during the run. Cushion shoes are recommended, as they encourage proper pronation, without preventing the foot from rolling inward. Cushion shoes also have extra cushioning for shock absorption.The perfect running shoe differs from person to person, varying for how they run, where they run, and many other specifications. Have you ever gone out shopping with your friends, or whoever, and while you're out you find an amazing pair of shoes, the shoes that you know you just couldn't possibly live without? The thing is, what do you do when they don't have your size? If you say, "forget it, I don't need them anyway." You need to turn around, go back to the store, and buy those bad boys! I'm sure this has happened to about 95% of women. It always seems as though the perfect shoe for you is always one-half or even one size too small. Or maybe you purchase the perfect pair of shoes, and when you get home, you realize they don't fit. Well, have I got news for you. There are ways around this problem. There are many techniques in which one can actually "stretch" their shoes. You'll almost NEVER have to worry about not finding the right size shoe again!I am going to take the time to help all of the women, who have this problem mentioned above, to "stretch" their shoes. I have found quite an assortment of interesting ways of doing this. There are the at-home remedies, using a shoe stretcher, and taking your shoes to a professional.I will list the at-home remedies that I have found, and then I will discuss them further each individually. The at-home remedies include wearing your shoes in, you can freeze them, you can use a damp newspaper, you can use oats and grain, you can use rubbing alcohol spray, and you can also use potatoes. In order to "wear your shoes in," you need to put the shoes on, and walk around in them for a while at home for a couple days. Take the shoes on and off, repeating this process. Within a day or two, your shoes should be well worn-in.The process of freezing your shoes is very interesting. This process is mostly for shoes made of leather or fake leather. You must have two plastic baggies, free of any holes, and able to seal. Fill both baggies one-third of the way with water, and seal them. Then, place a baggie inside of each shoe, and make sure that they fit the inside of the shoe completely. Following this, you place the shoes in the freezer, and wait until the ice is frozen, or just overnight. After you remove the shoes from the freezer, you must let the ice thaw before removing the baggies in order to avoid ruining your shoes. The idea of this is that the water turns into ice, which expands your shoe.The method of using damp newspaper is quite different but very easy. You will need to scrunch up wet newspaper, and shove as many pieces into your shoe as possible. Make sure that you do not deform the shape of your shoe. Wait for the newspaper to dry, and then remove it. This is very simple.The next at-home remedy involves using oats and grain. This method really only works on leather boots; however, you need to fill the boot with oats or grain, and pour enough water in to cover the oats or grain. The idea of this method is that the oats or grain will inflate overnight. However, I would not recommend this method on your favorite pair of expensive leather boots.This next option is a home-made shoe stretching spray. This concoction is made up of fifty percent rubbing alcohol and fifty percent water. It would be best to use a spray bottle, and spray the inside of the shoe. Then, it is recommended to put on a pair of socks and wear the shoe for about twenty minutes while still wet. This should stretch the shoe out pretty well.The last at-home remedy, which is sort of weird, is using a potato. Who would have thought? But this remedy is almost the simplest of all of the above mentioned. All you have to do is peel the potato (one that is large enough to create a bulge in the shoe) and let it sit over night.If you haven't caught on yet, there is an increasingly commonality on the methods of stretching the shoes. It is quite easy to see that all you need is something that will expand and hold position, while being inside your shoe for a decent amount of time. But also, besides these home remedies, there are still some other options for stretching your shoes. These include using an actual shoe stretcher (on leather shoes), just being patient, and last but not least, go to a professional to have the shoe stretched.Shoe stretchers are made of wood, and are designed in the shape of a foot. Most shoe stretches have adjustments that help with stretching the shoes. Also, shoe stretches are able to adjust not only the length, but also the width too.The idea of just being patient, and going slow with stretching your shoe is pretty much the same idea as wearing your shoes in. It is a known fact that you can't go anywhere and buy a shoe that will fit your foot just perfectly, unless of course you're having them custom made. All shoes need time to adjust themselves and mold themselves to the exact shape of your foot, so be patient.Finally, the last method of shoe stretching is to just visit a professional shoe stretcher. This is probably the easiest method of them all, but the most costly. However, if it is an expensive shoe that you just love, then it is well worth the cost of a professional shoe stretcher.Now that I have given you this information on all of the different ways (I'm sure there are more methods) to stretch your shoes, don't be so afraid to buy a pair that may be one-half size too small. Well, aging a beer should not burn off any sugars, there is no fermentation taking place inside the bottle to reduce the sugars. But the beer will change. Hop flavor, aroma, and bitterness will diminish with age. The alcohol will also mellow and all the flavors of the beer will blend and mesh a lot more into one coheasive complex mass than the younger version. I don't have experience with DFH120 aged five years, but I do with barleywines, so I would expect a slightly vinous character from the extended aging and oxidation. This is not a bad thing but a natural progression in aged beers. Let us know how you like the DFH 120 compared to how it was 5 years ago. It should prove interesting.

Am I the only one who likes it fresh?
I split a fresh (well, this year's batch anyway) bottle of 120 Minute with a friend back in July, and I was surprised by how drinkable it was for such a huge beer. Compared to other big beers (Mikkeller Black, NC Old Stock Ale, GI Bourbon County), the alcohol was much less apparent; yes, it was sweet, but it was a fairly complex and approachable sweetness, with lots of marshmallow and cotton candy flavors, and some very interesting esters from the yeast. I could've easily consumed an entire pint by myself.At $11/bottle, it's not something I'll be buying a case of, and I'm sure it improves with age, but given its size and style I say it's a fantastic brewing achievement and a very tasty beer.
Sweetness will stay
I have had an aged 120 three times at different ages. The first was after 2 years, then 3, then 4. The sweetness of the beer didn't go away much. This beer is incredibly robust and that won't change much. There were noticible differences between the three. While subtle, the biggest was the aged flavour. I would describe it as a little more mellow and smooth, but still very sweet. Allowing the beer to breathe while decanted brings out the balence of this beer. I stil wouldn't go as far as saying this is anything of a session beer and should probably be drank slowly and savoured, but to each his own.
My two cents on DFH IPA's
For the most part, anything above the lowest tier is almost a little too strong to really enjoy *DRINKING*, not "sipping" for me. I have no problem with the ABV or anything like that--and love that the DFH brews are almost always knocking over every taste bud in your mouth...but I'd prefer them a tad more mellow so I could actually drink them, not sip them.So I'm doubting cellaring them for a couple years would do the trick for me :)
Aging should benefit the 120
I would assume that five years of aging has done that beer some justice. I would think that it would be more round and less cloying. The first time that I tried 120, I felt that it could use some time in the cellar. Let me know what you discover. You may find that it could benefit even more from 5+ more years of aging.

Didn't have quite the same experience with the 120. Didn't go down quite as well as I hoped, but I wouldn't say it was undrinable. Would love to hear how aging affects the taste. Keep me updated.

DFH 120
I've found the 120-min fairly different not only from bottle, to draft and bottle-aged, but surprisingly different from batch to batch. I think what may "throw" people is that they expect it to be an evolution of 60-min and 90-min which are decidedly IPA's. With 120-min there's so much fermentable sugar that it comes out more sticky-sweet almost-barley-wine than the DIPA I suspect most people are expecting. On draft (the last time I had it a few weeks ago) it is loaded with a Belgian candied-sugar flavor. In bottles it's a little less confectionary-sweet but still full of that sticky-candy flavor. I've aged it for 5-years or so and it mellows out a little, and loses what little hop character it had, but essentially remains fairly constant. Check with me later...I have a cellared bottle that is at least 7-years old plur or minus a year.For those that didn't like it, I'd recommend having it as a 2nd or 3rd beer and not your 1st. Let your tastebuds warm up a little and it will taste much better and not so harsh. If you still don't like it try their Palo Santo Marron or Squall.Cheers

I'm a fan of 120 min thats at least 6 months aged. I''ve only had one fresh bottle and while it was good, it was a bit too sweet for me. Even fresh 90 min can be a bit sweet sometimes.
