We spoke with Upland Brewing Co. VP of Brewing Operations Pete Batule about Darken.

BC: Who came up with this beer’s recipe?  
This recipe was developed by our original brewer Caleb in 2008. It has had some minor adjustments over the years, but the recipe has pretty much remained the same.

BC: What’s your favorite aspect of this beer (flavor, aroma, etc.)? 
Darken was inspired by the “old ale” or Flander’s Brown style and we introduce spices in the boil to provide a more complex flavor profile. We age in oak barrels for 12-18 months and the spice character really comes into balance with the dark malt base.

BC: Is this your “desert island beer?” 
This beer is much more of a sipper and enjoyed in smaller quantities especially being north of 9%. I’d have to go with a more sessionable hoppy beer or a pilsner like Champagne Velvet.

BC: Can you describe this beer in 10 words or less? 
Sour brown ale with notes of licorice, cocoa, spiced wine.

BC: What's a good food pairing for this beer? 
Blue or fontina cheese, grilled beef.
