Green Onion Sausage and Collard Green Gumbo

INGREDIENTS:
¼ cup vegetable oil
¼ cup butter
½ cup all purpose flour
1 medium onion
1 medium green bell pepper
4 stalks of celery
1 bunch collard greens, chopped
1 pound green onion sausage (or any spicy sausage), browned on all sides
2 quarts chicken stock
salt
pepper
cayenne
DIRECTIONS:
Melt the butter in a large Dutch oven with the vegetable oil over medium heat. When hot, add the flour and stir constantly for 20-25 minutes until the color of dark chocolate.
Add diced celery, onion, and bell pepper, stir to coat. Add chicken stock slowly along with salt, pepper, and cayenne and bring to a boil.
Lower the heat to a simmer and add the collard greens. Let simmer for 60 to 90 minutes.
Slice the sausage on a bias and add to the pot for the last 30 minutes of cooking. Taste and adjust seasoning to taste. Serve over rice.
